8 oz pasta (penne or rotini works best)

1 lb ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 packet taco seasoning (about 1 oz)

1 can (14.5 oz) diced tomatoes (with green chilies for extra spice)

1 cup beef broth (or chicken broth)

1 can (15 oz) kidney beans, drained and rinsed

1 cup corn (frozen or canned)

1 cup shredded cheese (cheddar or Mexican blend)

1/2 cup sour cream

Fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Optional toppings: jalapeños, avocado, green onions, crushed tortilla chips

Instructions
 

Cook the Pasta: Begin by cooking the pasta according to package instructions in a large pot of salted water. Drain and set aside once tender.

    Brown the Meat: In a large skillet over medium heat, add the ground beef (or turkey). Cook until browned, breaking it up with a spoon, about 5-7 minutes. Drain excess fat if necessary.

      Sauté Veggies: Add the diced onion and minced garlic to the skillet with the meat. Sauté until the onion becomes translucent, about 3-4 minutes.

        Season and Simmer: Sprinkle the taco seasoning over the meat mixture, stirring well to coat. Pour in the diced tomatoes (with juices) and beef broth. Stir everything together and season with salt and pepper. Bring the mixture to a simmer.

          Add Beans and Corn: Stir in the kidney beans and corn, allowing the mixture to simmer for another 5 minutes to heat through.
