1 lb ground beef or turkey

1 packet taco seasoning mix

1 cup ranch dressing

1 cup shredded cheddar cheese

1 cup black beans, drained and rinsed

1 cup corn, drained (canned or frozen)

1 cup diced tomatoes (fresh or canned)

1/2 cup diced onions

1/2 cup chopped fresh cilantro

8 large flour tortillas

1 cup sour cream for serving

Fresh lime wedges for garnish

Instructions
 

Cook the Meat: In a large skillet, brown the ground beef or turkey over medium heat. Drain any excess fat. Stir in the taco seasoning mix along with a splash of water, and simmer for 5 minutes until well combined and heated through.

    Mix the Filling: In a large bowl, combine the cooked meat mixture, ranch dressing, shredded cheddar cheese, black beans, corn, diced tomatoes, diced onions, and chopped cilantro. Mix until everything is evenly coated.

      Prepare the Tortillas: Warm the flour tortillas in a microwave for about 30 seconds or until soft and pliable.

        Assemble the Bites: Place a generous spoonful of the taco ranch filling in the center of each tortilla. Fold in the sides and then roll it up tightly.

          Toast the Bites: Heat a non-stick skillet over medium heat. Place the rolled tortillas seam side down in the skillet and toast for 2-3 minutes until golden brown. Flip and repeat on the other side.

            Slice and Serve: Remove the toasted tortillas from the skillet and let them cool slightly. Slice into bite-sized pieces and arrange them on a serving platter.
