Ingredients
  

1 lb ground beef (or turkey for a healthier option)

1 medium onion, diced

2 cloves garlic, minced

1 packet taco seasoning (or homemade blend)

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) kidney beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (28 oz) diced tomatoes, with juices

2 cups beef or vegetable broth

1 cup salsa (your choice of spiciness)

1 bell pepper, diced (any color)

1 tsp cumin

Salt and pepper, to taste

Optional toppings: shredded cheese, sour cream, chopped cilantro, avocado, tortilla chips

Instructions
 

Cook the meat: In a large pot over medium heat, add the ground beef and cook until browned, about 5-7 minutes. Drain any excess fat.

    Sauté the aromatics: Add the diced onion and minced garlic to the pot. Sauté until the onion is translucent, about 3-5 minutes.

      Mix in seasonings: Stir in the taco seasoning and cumin. Cook for a minute until fragrant.

        Add the vegetables: Add the diced bell pepper, black beans, kidney beans, corn, and diced tomatoes (with their juices) to the pot.

          Incorporate liquids: Pour in the beef or vegetable broth and salsa, stirring everything together. Season with salt and pepper to taste.

            Simmer: Bring the mixture to a gentle boil. Reduce the heat and let it simmer for about 20-30 minutes, stirring occasionally to meld the flavors.
