8 ounces spaghetti

1 pound ground beef (or ground turkey for a lighter option)

1 medium onion, diced

2 cloves garlic, minced

1 packet taco seasoning (about 1 ounce)

1 can (15 ounces) diced tomatoes with green chilies

1 can (8 ounces) tomato sauce

1 cup beef broth (or chicken broth)

1 cup corn kernels (fresh or frozen)

1 can (15 ounces) black beans, drained and rinsed

1 cup shredded cheddar cheese

1 cup shredded lettuce

1 medium tomato, diced

½ cup sour cream (optional)

Fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Olive oil for sautéing

Instructions
 

Cook the Spaghetti: In a large pot, bring salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Drain and set aside.

    Sauté Meat and Vegetables: In a large skillet over medium heat, add a splash of olive oil. Once hot, add the diced onion and sauté for 2-3 minutes until translucent. Add minced garlic and cook for an additional minute.
