1 medium zucchini, sliced into thick rounds

1 medium yellow squash, sliced into thick rounds

1 red bell pepper, cut into bite-sized pieces

1 green bell pepper, cut into bite-sized pieces

1 red onion, cut into wedges

8 oz cherry tomatoes

3 tablespoons olive oil

2 tablespoons balsamic vinegar

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Marinade: In a large bowl, whisk together olive oil, balsamic vinegar, minced garlic, oregano, thyme, smoked paprika, salt, and pepper.
