1 cup brown rice (or white rice)

2 cups vegetable broth (or water)

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 medium red bell pepper, diced

1 small red onion, diced

2 cloves garlic, minced

1 teaspoon cumin powder

1 teaspoon chili powder

½ teaspoon smoked paprika

Salt and pepper, to taste

1 ripe avocado, sliced

1 cup cherry tomatoes, halved

1 cup shredded lettuce or mixed greens

½ cup salsa

¼ cup cilantro, chopped (optional)

Lime wedges, for serving

Instructions
 

Cook the Rice: In a medium saucepan, combine the brown rice and vegetable broth. Bring to a boil, then reduce the heat, cover, and simmer for about 40-45 minutes or until the rice is cooked through and liquid is absorbed. Fluff with a fork and set aside.

    Sauté the Vegetables: In a large skillet over medium heat, add a splash of olive oil. Once hot, add the diced red onion and bell pepper. Sauté for about 5 minutes until they start to soften. Add the minced garlic, cumin, chili powder, and smoked paprika; cook for an additional 1-2 minutes until fragrant.

      Add Beans and Corn: Stir in the black beans and corn kernels. Season with salt and pepper to taste. Cook for about 5-7 minutes until heated through and the mixture is well combined.

        Assemble the Taco Bowl: In serving bowls, start with a base of cooked rice. Top with the black bean and corn mixture, then add sliced avocado, cherry tomatoes, and shredded lettuce.

          Garnish: Spoon salsa on top of each bowl, sprinkle with chopped cilantro (if using), and serve with lime wedges on the side.
