Tender Honey Sriracha Meatballs

1 lb ground beef (or ground turkey for a leaner option)

1/2 cup breadcrumbs (preferably panko for extra crunch)

1/4 cup grated Parmesan cheese

1/4 cup finely chopped green onions (scallions)

1 clove garlic, minced

1 large egg

2 tablespoons soy sauce

1 teaspoon ginger, grated

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 cup honey

1/4 cup sriracha sauce (adjust for spice preference)

1 tablespoon rice vinegar

1 tablespoon sesame oil

Fresh cilantro, for garnish

Sesame seeds, for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.

    Prepare the Meatball Mixture: In a large mixing bowl, combine the ground beef (or turkey), breadcrumbs, Parmesan cheese, chopped green onions, minced garlic, egg, soy sauce, grated ginger, salt, and pepper. Mix until just combined, being careful not to overwork the meat.

      Form Meatballs: Using your hands, form the mixture into small meatballs, about 1 inch in diameter, and arrange them on the prepared baking sheet, leaving space between each meatball.

        Bake the Meatballs: Bake in the preheated oven for 18-20 minutes, or until the meatballs are cooked through and browned.

          Make the Sauce: While the meatballs are baking, prepare the Honey Sriracha sauce. In a small saucepan over medium heat, combine the honey, sriracha sauce, rice vinegar, and sesame oil. Allow the mixture to simmer for 2-3 minutes, stirring continuously until well blended and slightly thickened.

            Coat the Meatballs: Once the meatballs are done baking, transfer them to a large mixing bowl. Pour the honey sriracha sauce over the meatballs and gently toss until they are well coated.
