Ingredients

1 pound pork tenderloin, cut into bite-sized cubes

1/4 cup Dijon mustard

1/4 cup pure maple syrup

2 tablespoons soy sauce

1 tablespoon apple cider vinegar

2 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)

1/4 teaspoon black pepper

2 tablespoons olive oil

Salt to taste

Fresh parsley, chopped (for garnish)

Instructions

Marinate the Pork: In a medium bowl, whisk together the Dijon mustard, maple syrup, soy sauce, apple cider vinegar, minced garlic, rosemary, black pepper, and a pinch of salt until well combined.

Combine Ingredients: Add the cubed pork tenderloin to the marinade. Toss to coat the pork evenly. Cover and refrigerate for at least 30 minutes—up to 2 hours for more flavor.

Prepare to Cook: Heat the olive oil in a large skillet over medium-high heat. Once hot, remove the pork from the marinade, allowing any excess marinade to drip off.

Sear the Pork: Add the marinated pork bites to the skillet in a single layer (cook in batches if necessary to avoid overcrowding). Sear for about 2-3 minutes per side or until they are golden brown and cooked through (internal temperature should reach 145°F).

Glaze the Pork: Pour any remaining marinade into the skillet and let it bubble for 1-2 minutes, allowing the flavors to deepen and slightly thicken. Toss the pork bites in the sauce to coat.

Serve: Remove from heat, garnish with freshly chopped parsley, and serve immediately.
