Ingredients

1 lb boneless, skinless chicken thighs, sliced into bite-sized pieces

1 cup fresh pineapple chunks (or canned, drained)

1 bell pepper (red or yellow), sliced

1 cup snap peas, trimmed

2 green onions, sliced

3 cloves garlic, minced

2 tablespoons fresh ginger, minced

1/4 cup soy sauce (low sodium preferred)

2 tablespoons teriyaki sauce

1 tablespoon sesame oil

1 tablespoon vegetable oil (for cooking)

1 tablespoon cornstarch mixed with 2 tablespoons cold water (for thickening)

Sesame seeds (for garnish)

Fresh cilantro or basil (for garnish)

Instructions

Marinate the Chicken: In a medium bowl, combine the sliced chicken thighs with soy sauce, teriyaki sauce, minced garlic, and minced ginger. Let it marinate for at least 15 minutes to infuse the flavors.

Prepare the Vegetables: While the chicken is marinating, chop the bell pepper, trim the snap peas, and slice the green onions. Set aside.

Cook the Chicken: Heat the vegetable oil in a large skillet or wok over medium-high heat. Once the oil is hot, add the marinated chicken to the pan. Stir-fry for about 5-7 minutes until the chicken is browned and cooked through.

Add the Vegetables: Add the bell pepper, snap peas, and pineapple chunks to the skillet. Stir-fry for an additional 3-4 minutes until the vegetables are tender-crisp.

Thicken the Sauce: Pour in the cornstarch mixture into the stir-fry. Stir continuously for about one minute until the sauce thickens and coats the chicken and vegetables evenly.

Finish and Garnish: Remove the skillet from the heat and drizzle with sesame oil. Toss in the sliced green onions, and give everything a good mix. Serve hot, garnished with sesame seeds and fresh cilantro or basil.

Enjoy: Pair this delicious stir fry with steamed rice or quinoa for a complete meal!
