2 boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup fresh pineapple, diced

1 cup teriyaki sauce (homemade or store-bought)

1 tablespoon olive oil

1 red bell pepper, diced

1 yellow bell pepper, diced

1 cup cooked jasmine rice

2 green onions, sliced for garnish

1 teaspoon sesame seeds for garnish

Salt and pepper to taste

Marinate the Chicken: In a medium bowl, combine the diced chicken with half of the teriyaki sauce. Mix well to ensure all pieces are coated. Cover and let it marinate for at least 30 minutes in the refrigerator (up to 4 hours for maximum flavor).

    Sauté the Vegetables: In a large skillet or frying pan, heat the olive oil over medium heat. Add the diced red and yellow bell peppers. Sauté for about 4-5 minutes or until they are tender but still crisp. Season with a little salt and pepper. Remove from the pan and set aside.
