Teriyaki is a term that evokes images of sizzling dishes bursting with flavor, often associated with traditional Japanese cuisine. The name itself translates to “glaze” (teriyaki) due to the sweet, soy-based sauce used to marinate and glaze meats, vegetables, and tofu. Over the years, this cooking style has gained immense popularity worldwide, with many chefs and home cooks embracing the harmonious blend of sweet, savory, and umami notes that teriyaki sauces provide. The appeal of teriyaki is not only in its delicious flavor profile but also in its versatility, making it a favorite for both meat lovers and plant-based eaters alike.

Ingredients

14 oz (400g) firm tofu, pressed and cubed

2 tablespoons cornstarch

2 tablespoons vegetable oil (for frying)

1 cup bell peppers, sliced (assorted colors)

1 cup broccoli florets

1 cup cooked jasmine rice (or brown rice)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

For the Teriyaki Sauce:

½ cup soy sauce or tamari (for gluten-free)

¼ cup mirin (or rice vinegar)

2 tablespoons brown sugar

1 teaspoon garlic, minced

1 teaspoon ginger, minced

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

Instructions

Prepare the Tofu: Start by pressing the tofu for at least 30 minutes to remove excess moisture. Once pressed, cut the tofu into 1-inch cubes.

Coat the Tofu: In a bowl, toss the cubed tofu with 2 tablespoons of cornstarch until evenly coated. This will help create a crispy exterior when frying.

Fry the Tofu: Heat 2 tablespoons of vegetable oil in a non-stick skillet over medium heat. Once hot, carefully add the tofu cubes and fry until golden brown and crispy on all sides, about 10-12 minutes. Remove and set aside.

Sauté the Vegetables: In the same skillet, add the sliced bell peppers and broccoli florets. Sauté for about 5 minutes until they begin to soften but are still vibrant.

Prepare the Teriyaki Sauce: In a small saucepan, combine the soy sauce, mirin, brown sugar, minced garlic, and ginger. Heat it over medium heat until the sugar dissolves. Stir in the cornstarch slurry, cooking until the sauce thickens (about 2-3 minutes). Remove from heat.

Combine Everything: Add the fried tofu back to the skillet with the sautéed vegetables. Pour the teriyaki sauce over and gently toss to coat the tofu and veggies evenly.

Assemble the Bowl: In serving bowls, place a generous scoop of jasmine rice. Top with the teriyaki tofu and vegetable mixture.

Garnish: Sprinkle with chopped green onions and sesame seeds before serving.
