1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1/4 cup all-purpose flour

1 tsp paprika

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp salt

1/4 tsp black pepper

1/4 cup unsalted butter (divided)

3 cloves garlic, minced

1 cup heavy cream

1/4 cup chicken broth

1/2 cup sour cream

1/2 cup shredded cheddar cheese

1 cup cherry tomatoes, halved

1/4 cup chopped fresh parsley (for garnish)

Optional: cooked rice or pasta (for serving)

Instructions
 

Prepare the Chicken: In a mixing bowl, combine the flour, paprika, garlic powder, onion powder, salt, and black pepper. Toss the chicken pieces in the flour mixture until they are well coated.

    Sauté the Chicken: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the coated chicken pieces in batches, being careful not to overcrowd the skillet. Cook until golden brown on all sides (about 5-6 minutes), then remove from the skillet and set aside.

      Sauté Garlic: In the same skillet, add the remaining butter. Once melted, add the minced garlic and sauté for 1-2 minutes until fragrant, being cautious not to let it burn.

        Make the Sauce: Add the heavy cream and chicken broth to the skillet, stirring to combine. Bring the mixture to a simmer, then add the sour cream and shredded cheddar cheese. Stir until the cheese has melted and the sauce is creamy.

          Combine Everything: Return the cooked chicken to the skillet and add the halved cherry tomatoes. Stir to coat the chicken and tomatoes in the sauce. Let cook for an additional 5 minutes on low heat to heat everything through.
