1 lb ground chicken

1 tablespoon vegetable oil

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 red bell pepper, finely diced

1 cup shredded carrots

3 green onions, sliced (white and green parts separated)

1/4 cup chopped fresh cilantro

1 head of butter lettuce or romaine, leaves separated

1/4 cup peanuts, chopped (for garnish)

For the Peanut Sauce:

1/3 cup creamy peanut butter

3 tablespoons soy sauce

2 tablespoons honey or maple syrup

1 tablespoon rice vinegar

1 tablespoon lime juice

1 teaspoon sriracha (optional, for heat)

Water to thin as needed

Prepare the Peanut Sauce: In a small bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, lime juice, and sriracha if using. Add water a tablespoon at a time until the sauce reaches your desired consistency. Set aside.

    Cook the Chicken: Heat the vegetable oil in a large skillet over medium heat. Add the minced garlic and ginger, sauté for about 1 minute until fragrant.

      Add Chicken: Add the ground chicken to the skillet. Cook, breaking it apart with a spoon, until it’s browned and fully cooked, about 6-7 minutes.

        Incorporate Vegetables: Stir in the red bell pepper, shredded carrots, and the white parts of the green onions. Cook for an additional 3-4 minutes until the veggies are tender.

          Combine Flavors: Remove the skillet from heat and stir in the chopped cilantro. Pour half of the peanut sauce over the chicken mixture and stir well to combine.
