4 cloves garlic, minced

1 pound ground beef (or turkey for a lighter option)

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes

1 can (6 oz) tomato paste

2 tablespoons chili powder

1 tablespoon cumin

1 teaspoon smoked paprika

1 teaspoon oregano

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1 teaspoon sugar (to balance acidity)

1 cup beef broth (or vegetable broth for a vegetarian version)

Instructions
 

Heat the Oil: In a large pot or Dutch oven, heat the olive oil over medium heat.

        Combine Ingredients: Add the kidney beans, black beans, diced tomatoes (with juice), tomato paste, chili powder, cumin, smoked paprika, oregano, salt, black pepper, sugar, and broth. Stir well to combine.

          Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for at least 30 minutes, stirring occasionally. For deeper flavor, let it simmer for up to 2 hours if time allows.
