4 large russet potatoes, peeled and diced

1 medium onion, finely chopped

3 cloves garlic, minced

6 slices of thick-cut bacon, chopped

4 cups chicken broth (or vegetable broth for a lighter option)

1 cup heavy cream

1 cup shredded sharp cheddar cheese

1 teaspoon dried thyme

Salt and pepper to taste

2 green onions, sliced (for garnish)

1 tablespoon olive oil

Cook the bacon: In a large pot, add the chopped bacon and cook over medium heat until crispy, about 6-8 minutes. Remove the bacon pieces and set aside, keeping the grease in the pot.

    Sauté the aromatics: Add olive oil to the pot with the bacon grease. Add chopped onions and minced garlic, sautéing for about 5 minutes until they become translucent and fragrant.

      Add potatoes and broth: Stir in the diced potatoes, dried thyme, salt, and pepper. Pour in the chicken broth, bringing it to a boil. Lower the heat to a simmer and cover. Cook for approximately 20 minutes, or until the potatoes are fork-tender.

        Blend the soup: Using an immersion blender, carefully puree the soup until it reaches your desired consistency. For a chunkier texture, blend only half of the soup or mash some of the potatoes with a fork.

          Stir in cream and cheese: Return the pot to low heat, and add the heavy cream and shredded cheddar cheese. Stir until the cheese is melted and the soup is nicely combined and creamy. Adjust seasoning with more salt and pepper if needed.

            Add bacon back: Stir in the crispy bacon pieces, reserving some for garnish if desired.
