4 large eggs

1 cup vegetable oil

2 teaspoons vanilla extract

3 cups finely grated carrots (about 6 medium carrots)

1 cup crushed pineapple, drained

1 cup chopped walnuts or pecans (optional)

½ cup raisins (optional)

For Cream Cheese Frosting:

8 oz cream cheese, softened

½ cup unsalted butter, softened

4 cups powdered sugar

2 teaspoons vanilla extract

1-2 tablespoons milk (if necessary for thinning)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.

    Mix Dry Ingredients: In a large bowl, sift together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

      Mix Wet Ingredients: In another bowl, whisk together the eggs, vegetable oil, and vanilla extract until blended.
