Ingredients

For the Crust:

1 ½ cups all-purpose flour

½ teaspoon salt

1 tablespoon granulated sugar

½ cup unsalted butter, cold and cubed

4-5 tablespoons ice water

For the Filling:

1 cup light corn syrup

1 cup packed light brown sugar

½ cup granulated sugar

4 large eggs

¼ cup unsalted butter, melted

1 teaspoon vanilla extract

2 cups pecans, chopped (or whole, if you prefer)

¼ teaspoon salt

Instructions

Make the Pie Crust:

    - In a large bowl, combine flour, salt, and sugar.

      - Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.

        - Stir in the ice water, one tablespoon at a time, until the dough comes together.

          - Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

            Preheat Oven:

              - Preheat your oven to 350°F (175°C).

                Roll Out the Dough:

                  - On a floured surface, roll out the chilled dough into a circle about 12 inches in diameter.

                    - Transfer the dough to a 9-inch pie dish, trimming the excess and crimping the edges as desired.

                      Prepare the Filling:

                        - In a large mixing bowl, combine the corn syrup, brown sugar, granulated sugar, and salt. Whisk until blended and smooth.

                          - Add the eggs, melted butter, and vanilla extract, and whisk until fully incorporated.

                            - Fold in the pecans until evenly distributed.

                              Assemble the Pie:

                                - Pour the pecan filling into the prepared crust, spreading the pecans evenly.

                                  Bake the Pie:

                                    - Bake in the preheated oven for 50-60 minutes, or until the filling is set and slightly puffed. The center should still jiggle slightly but not be liquid. If the crust begins to brown too quickly, cover the edges with foil.

                                      Cool and Serve:

                                        - Allow the pie to cool at room temperature for at least 2 hours before slicing. This will help the filling firm up.

                                          Enjoy!

                                            - Serve your homemade pecan pie plain, or with a dollop of whipped cream or a scoop of vanilla ice cream if desired.
