1 cup sushi rice

1 ¼ cups water

1 tablespoon rice vinegar

1 tablespoon sugar

½ teaspoon salt

2 nori sheets (seaweed)

1 can (5 oz) tuna in water, drained

2 tablespoons mayonnaise (preferably Kewpie)

1 tablespoon sriracha (adjust to taste)

1 teaspoon soy sauce

½ avocado, sliced

½ cucumber, julienned

¼ cup shredded carrots

2 green onions, finely chopped

Sesame seeds (for garnish)

Fresh cilantro leaves (optional)

Instructions
 

Prepare the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. Combine rice and water in a medium saucepan and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 18-20 minutes until water is absorbed. Remove from heat and let it rest for 10 minutes, still covered.

    Season the Rice: In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the warm rice using a wooden spatula. Allow the rice to cool slightly.

      Make the Spicy Tuna Filling: In a mixing bowl, combine the drained tuna, mayonnaise, sriracha, and soy sauce. Mix well until the tuna is evenly coated and set aside.

        Prepare the Onigirazu: Lay a sheet of nori on a clean surface, shiny side down. Wet your hands and take about ½ cup of sushi rice, pressing it into a square shape in the center of the nori, leaving about 2 inches of space around the edges.

          Add the Fillings: Place a scoop of the spicy tuna mixture, followed by slices of avocado, julienned cucumber, shredded carrots, and chopped green onions on top of the rice. Optionally, sprinkle some sesame seeds and fresh cilantro leaves for added flavor.

              Toast (optional): Heat a non-stick skillet over medium heat. Place the onigirazu seam-side down in the skillet and toast for 1-2 minutes on each side until the nori is crispy.

                Slice and Serve: Allow the onigirazu to cool for a minute, then slice in half diagonally. Serve with extra sriracha and soy sauce on the side for dipping.
