Ingredients

1 ½ cups all-purpose flour

2 tablespoons granulated sugar

1 tablespoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 large egg

1 ¼ cups buttermilk (or milk + 1 tablespoon vinegar)

3 tablespoons unsalted butter, melted

1 teaspoon vanilla extract

Extra butter or oil for cooking

Fresh fruits, maple syrup, or whipped cream for topping (optional)

Instructions

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

Combine Wet Ingredients: In a separate bowl, beat the egg. Then add the buttermilk, melted butter, and vanilla extract. Mix well until smooth.

Combine Dry and Wet Mixtures: Pour the wet ingredients into the dry ingredients. Stir gently with a spatula just until combined; it's okay if some lumps remain. Do not overmix!

Rest the Batter: Let the batter sit for about 10-15 minutes. This resting time allows the baking powder to activate and makes the pancakes fluffier.

Preheat the Pan: In a non-stick skillet or griddle, heat a small amount of butter or oil over medium heat. You can test if it’s ready by dropping a small amount of batter onto the pan; it should sizzle.

Cook the Pancakes: Pour about ¼ cup of batter onto the hot skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes or until golden brown.

Serve Warm: Once cooked, transfer pancakes to a plate and keep them warm in a slightly heated oven. Repeat with the remaining batter.

Add Toppings: Serve pancakes warm with your favorite toppings like fresh fruits, a drizzle of maple syrup, or a dollop of whipped cream for an extra indulgent breakfast!
