2 cups rolled oats

1 cup mixed nuts (almonds, walnuts, pecans), chopped

1/2 cup unsweetened nut butter (like almond or peanut)

1/3 cup honey or maple syrup

1/2 cup dried fruit (cranberries, apricots, or raisins)

1/4 cup mini chocolate chips (optional)

1/4 cup sunflower seeds

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon salt

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line an 8x8-inch (or 9x9-inch) baking dish with parchment paper, leaving some overhang on the sides for easy removal later.

    Toast the Oats and Nuts: On a baking sheet, spread the rolled oats and chopped mixed nuts evenly. Toast them in the preheated oven for about 10-12 minutes, stirring halfway through, until they are lightly golden and fragrant. Remove from oven and allow to cool slightly.

      Prepare the Wet Mixture: In a medium saucepan, combine the nut butter, honey (or maple syrup), vanilla extract, cinnamon, and salt. Heat over low to medium heat, stirring constantly until the mixture is smooth and well-blended. This should take about 3-5 minutes.

        Mix Everything Together: In a large mixing bowl, combine the toasted oats and nuts, dried fruit, sunflower seeds, and optional chocolate chips. Pour the warm nut butter mixture over this mixture and stir well until everything is evenly coated.

          Press into the Baking Dish: Transfer the entire mixture to the prepared baking dish. Use a spatula or the back of a measuring cup to firmly press the granola mixture into an even layer. Make sure to press down really hard; this helps the bars hold together once cooled.

            Chill and Set: Place the baking dish in the refrigerator for at least 1-2 hours to allow the granola bars to firm up.

              Cut Into Bars: Once set, use the parchment overhang to lift the granola out of the dish. Place it on a cutting board and cut it into your desired size bars.
