2 cups rolled oats

1 cup mixed nuts (almonds, walnuts, cashews), chopped

½ cup seeds (sunflower seeds, pumpkin seeds)

½ cup honey or maple syrup

½ cup natural almond or peanut butter

1 teaspoon vanilla extract

½ teaspoon cinnamon

¼ teaspoon salt

½ cup dried fruit (raisins, cranberries, or apricots), chopped

Optional: ½ cup dark chocolate chips or chunks

Instructions
 

Preheat your oven to 350°F (175°C). Line a baking dish (9x9 inch works well) with parchment paper, leaving a bit overhanging for easy removal later.

    Toast the Oats and Nuts: In a dry skillet over medium heat, toast the rolled oats and chopped mixed nuts for about 5-7 minutes, stirring frequently, until they are golden and fragrant. This enhances their flavors.

      Mix the Wet Ingredients: In a small saucepan over low heat, combine the honey (or maple syrup) and nut butter. Stir until smooth and well combined. Remove from heat and mix in the vanilla extract, cinnamon, and salt.

        Combine: In a large mixing bowl, combine the toasted oats, nuts, and seeds. Pour the wet mixture over the dry ingredients, stirring well to ensure everything is evenly coated.

          Add Dried Fruit: Fold in your choice of dried fruits and, if using, the dark chocolate chips.

            Press and Shape: Transfer the mixture to the lined baking dish. Use a spatula or your hands (damp them slightly to prevent sticking!) to firmly press the mixture into an even layer. Make sure it’s packed tightly to help the bars hold together once baked.

              Bake: Place the filled dish in the preheated oven and bake for 20-25 minutes, or until the edges are slightly golden.

                Cool Completely: Remove from the oven and allow to cool in the pan for about 10 minutes, then lift out using the parchment paper and place it on a wire rack to cool completely (around 30 minutes).

                  Cut into Bars: Once cooled, cut into bars or squares as desired. Store them in an airtight container at room temperature for up to a week or in the fridge for longer-lasting freshness.
