1 lb ground beef or Italian sausage

1 medium onion, diced

3 cloves garlic, minced

1 (28 oz) can crushed tomatoes

2 (15 oz) cans tomato sauce

4 cups beef broth

8 oz uncooked lasagna noodles, broken into pieces

1 tsp dried oregano

1 tsp dried basil

Salt and pepper, to taste

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Fresh basil or parsley, for garnish

Instructions
 

Brown the Meat: In a large pot or Dutch oven, over medium heat, add the ground beef or sausage. Cook until browned, breaking it up with a spoon, about 5-7 minutes. Drain excess fat if necessary.

    Sauté Vegetables: Add the diced onion and minced garlic to the pot. Sauté until the onion becomes translucent, about 3-4 minutes.

      Add Tomatoes and Broth: Stir in the crushed tomatoes, tomato sauce, and beef broth. Bring to a simmer.

        Season the Soup: Add the broken lasagna noodles, oregano, basil, salt, and pepper. Stir well and let the soup simmer, covered, for about 15-20 minutes, or until the noodles are tender.

          Prepare the Cheese Mixture: In a small bowl, combine the ricotta cheese, mozzarella cheese, and half of the Parmesan cheese. Mix until well combined.

            Finish the Soup: Once the noodles are cooked, remove the pot from heat. Stir in the cheese mixture until melted and creamy. Adjust seasoning if needed.

              Serve: Ladle the soup into bowls, and sprinkle with remaining Parmesan cheese and fresh basil or parsley for garnish.
