2 pounds red potatoes, halved or quartered depending on size

3 tablespoons olive oil

1 teaspoon sea salt

1 teaspoon black pepper

1 tablespoon garlic powder

1 tablespoon dried rosemary (or 2 tablespoons fresh, finely chopped)

1 tablespoon smoked paprika

1 teaspoon onion powder

Fresh parsley, for garnish (optional)

Instructions
 

Preheat your oven to 425°F (220°C).

    Rinse the red potatoes under cold water and pat them dry with a towel. If they are large, halve them; if they are medium-sized, quarter them.

      In a large mixing bowl, combine the olive oil, sea salt, black pepper, garlic powder, dried rosemary, smoked paprika, and onion powder. Whisk until combined.

        Add the halved or quartered potatoes into the bowl and toss to coat them evenly with the seasoning mixture.

          Spread the potatoes in a single layer on a large baking sheet lined with parchment paper. Make sure they are not overcrowded for even roasting.

            Roast in the preheated oven for 30-35 minutes, turning them halfway through, until they are golden brown and crispy on the outside, while tender on the inside.

              Remove from the oven and let them cool for a couple of minutes. Garnish with freshly chopped parsley if desired.

                Serve warm and enjoy!
