Ingredients

3-4 pounds of chuck roast

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

2 cups beef broth

1 cup red wine (optional, for extra depth)

4 cloves garlic, minced

1 large onion, quartered

4 medium carrots, cut into 2-inch pieces

4 medium potatoes, quartered

2-3 sprigs fresh thyme

2-3 sprigs fresh rosemary

2 tablespoons Worcestershire sauce

1 tablespoon balsamic vinegar

1 bay leaf

Instructions

Sear the Roast: In a large skillet, heat the olive oil over medium-high heat. Season the chuck roast with salt and black pepper. Sear the roast for about 4-5 minutes on each side until a deep brown crust forms. This step adds flavorful depth to your pot roast.

Layer Ingredients in Slow Cooker: Place the quartered onion at the bottom of the slow cooker. Add the garlic, carrots, potatoes, thyme, and rosemary on top.

Add the Roast and Liquids: Place the seared roast on top of the vegetables. In a separate bowl, mix together the beef broth, red wine (if using), Worcestershire sauce, balsamic vinegar, and bay leaf, then pour this mixture over the roast and vegetables.

Cook Low and Slow: Cover the slow cooker with the lid and set it on low for 8-10 hours or on high for 4-5 hours. The low setting is recommended for maximum tenderness.

Check for Doneness: About an hour before cooking is complete, check the roast for tenderness. It should easily pull apart with a fork when it’s done.

Serve: Once cooked, remove the roast and let it rest for about 10 minutes before slicing. Use a slotted spoon to serve the vegetables alongside the roast. Drizzle some of the cooking juices over each serving for extra flavor.

Enjoy: Pair your pot roast with a fresh salad or a loaf of crusty bread to soak up the delicious gravy!
