2 medium zucchinis

1 cup grated Parmesan cheese

1 cup breadcrumbs (preferably panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper, to taste

2 large eggs

Olive oil spray or 2 tablespoons olive oil

Instructions
 

Preheat the Oven:

    Preheat your oven to 425°F (220°C) and line two baking sheets with parchment paper for easy cleanup.

      Prepare the Zucchini:

        Rinse the zucchinis and pat them dry with a paper towel. Slice them into thin rounds, about 1/4 inch thick. Make sure they are uniform in thickness to ensure even cooking.

          Set Up Dredging Station:

            In one shallow bowl, whisk the eggs. In another bowl, mix together the grated Parmesan, breadcrumbs, garlic powder, onion powder, oregano, smoked paprika, salt, and pepper until well combined.

              Coat the Zucchini:

                Dip each zucchini slice into the egg mixture, allowing any excess to drip off. Then place the zucchini in the breadcrumb mixture, pressing it gently to ensure it adheres well. Set aside on a plate or wire rack.

                  Arrange on Baking Sheets:

                    Place the coated zucchini chips in a single layer on the prepared baking sheets, making sure not to overcrowd them. Spray lightly with olive oil or drizzle with olive oil for extra crispiness.

                      Bake the Chips:
