4 boneless, skinless chicken breasts

2 ripe peaches, pitted and diced

1/2 cup peach preserves

1/4 cup barbecue sauce (your favorite variety)

1 tablespoon Dijon mustard

2 garlic cloves, minced

1 tablespoon fresh ginger, grated

1 tablespoon soy sauce

1 tablespoon olive oil

Salt and pepper to taste

Fresh rosemary or thyme sprigs for garnish (optional)

Prepare the Marinade: In a mixing bowl, combine the diced peaches, peach preserves, barbecue sauce, Dijon mustard, minced garlic, grated ginger, soy sauce, and olive oil. Mix well until all ingredients are thoroughly combined.

    Marinate the Chicken: Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the peach marinade over the chicken, making sure to coat each piece well. Seal the bag or cover the dish and refrigerate for at least 1 hour (or up to 4 hours for more flavor).

      Preheat the Grill: Preheat your grill to medium-high heat. If using charcoal, allow the coals to become ashen.

        Remove Chicken from Marinade: Take the chicken out of the marinade, allowing the excess to drip off. Season both sides with salt and pepper to taste.
