1 cup all-purpose flour

1/4 cup unsweetened cocoa powder

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk (any kind)

1 large egg

2 tablespoons melted butter (plus extra for cooking)

1 teaspoon vanilla extract

1/2 cup chocolate chips (optional, for extra chocolatey goodness)

Whipped cream and fresh berries for serving (optional)

Instructions
 

Combine Dry Ingredients: In a large mixing bowl, sift together the flour, cocoa powder, sugar, baking powder, and salt. Mix until well combined.

    Mix Wet Ingredients: In another bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.

      Combine Mixtures: Pour the wet ingredients into the dry ingredients. Gently fold to combine, being careful not to overmix. The batter should be slightly lumpy. If using chocolate chips, fold them in at this stage.

        Preheat Pan: Heat a non-stick skillet or griddle over medium heat and add a small amount of butter to coat the surface.
