1 ½ cups warm water (110°F to 115°F)

2 tablespoons granulated sugar

2 ¼ teaspoons active dry yeast (1 packet)

4 cups all-purpose flour

1 teaspoon salt

¼ cup unsalted butter, melted

10 cups water (for boiling)

⅓ cup baking soda

Coarse sea salt (for topping)

1 egg (for egg wash, optional)

Instructions
 

Activate the Yeast: In a large mixing bowl, combine the warm water and granulated sugar. Sprinkle the yeast on top and let it rest for about 5 minutes, until it becomes frothy and bubbly.

    Mix the Dough: Add the flour and salt to the yeast mixture. Mix until a soft dough forms. Then, pour in the melted butter and knead for about 5 minutes on a lightly floured surface or with a stand mixer fitted with a dough hook until smooth and elastic.

      Let It Rise: Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until it has doubled in size.

        Shape the Pretzels: Once risen, punch down the dough and divide it into 8 equal pieces. Roll each piece into a long rope (about 24 inches long). Shape each rope into a pretzel by forming a U-shape, crossing the ends over each other, and then bringing them back down to the base of the U.

          Prepare to Boil: Preheat your oven to 450°F (232°C). In a large pot, bring the 10 cups of water to a boil, then carefully stir in the baking soda (it will fizz a bit).

            Boil the Pretzels: Working in batches, add the pretzels to the boiling water for about 30 seconds each, flipping them halfway through. Remove them using a slotted spoon and place them on a lined baking sheet.

              Egg Wash (Optional): If you want a gorgeous golden color, beat the egg and brush it over each pretzel. This step is optional but adds a beautiful shine.

                Sprinkle with Salt: Generously sprinkle coarse sea salt over the pretzels while they are still wet.
