1 ½ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon baking powder

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon ground ginger

¼ teaspoon ground cloves

½ teaspoon salt

1 cup granulated sugar

½ cup packed brown sugar

½ cup vegetable oil (or melted coconut oil)

2 large eggs

1 cup canned pumpkin puree (not pumpkin pie filling)

⅓ cup plain yogurt or sour cream

1 teaspoon vanilla extract

½ cup walnuts or pecans, chopped (optional)

½ cup raisins or chocolate chips (optional)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, spices (cinnamon, nutmeg, ginger, and cloves), and salt until well combined. Set aside.

      Combine Sugars and Oil: In a large mixing bowl, combine the granulated sugar, brown sugar, and vegetable oil. Mix well until the mixture is smooth.

        Add Eggs and Pumpkin: To the sugar-oil mixture, add the two eggs, pumpkin puree, yogurt (or sour cream), and vanilla extract. Beat until all the wet ingredients are thoroughly combined and smooth.
