Tofu Tacos with Mango Slaw

14 oz firm tofu, drained and pressed

2 tbsp soy sauce

1 tbsp olive oil

1 tsp smoked paprika

1 tsp garlic powder

1/2 tsp chili powder

Salt and pepper to taste

_For the Mango Slaw:_

1 cup red cabbage, finely shredded

1 cup green cabbage, finely shredded

1 ripe mango, peeled and diced

1/4 cup red onion, thinly sliced

1/4 cup cilantro, chopped

Juice of 1 lime

1 tbsp honey (or agave for vegan option)

Salt and pepper to taste

_For the Tacos:_

8 small corn or flour tortillas

Avocado slices (optional)

Lime wedges for garnish

Prepare the Tofu:

    - Cut the pressed tofu into 1-inch cubes.

      - In a bowl, whisk together the soy sauce, olive oil, smoked paprika, garlic powder, chili powder, salt, and pepper.

        - Marinate the tofu cubes in the mixture for at least 15 minutes.

          Cook the Tofu:

            - Heat a non-stick skillet over medium-high heat.

              - Once hot, add the marinated tofu cubes and cook for about 8-10 minutes, turning occasionally until they are golden brown and slightly crispy on all sides.

                Make the Mango Slaw:

                  - In a large bowl, combine the shredded red cabbage, green cabbage, diced mango, red onion, and cilantro.

                    - In a small bowl, whisk together the lime juice, honey (or agave), salt, and pepper.

                      - Pour the dressing over the slaw and toss gently to combine. Let it sit for about 10 minutes to let the flavors meld.

                        Prepare the Tortillas:

                          - Warm the tortillas in a dry skillet over medium heat for about 30 seconds per side, or until pliable and warmed through.
