1 cup couscous

1 cup vegetable broth (or water)

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 cup cherry tomatoes, halved

1 teaspoon dried oregano

Salt and pepper to taste

1/4 cup fresh basil leaves, chopped

1 tablespoon lemon juice

Grated Parmesan cheese (optional, for serving)

Prepare the Couscous: In a medium saucepan, bring the vegetable broth (or water) to a boil. Once boiling, stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes until the couscous has absorbed the liquid.

    Sauté the Vegetables: While the couscous is resting, heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

      Add Garlic and Tomatoes: Add the minced garlic and halved cherry tomatoes to the skillet. Sauté for another 5 minutes, until the tomatoes soften and start to burst. Stir in the dried oregano, and season with salt and pepper.

        Combine Ingredients: Fluff the couscous with a fork and add it to the skillet with the sautéed vegetables. Mix well to combine. Stir in the chopped basil and lemon juice, adjusting seasoning if needed.

          Serve: Transfer the Tomato Basil Couscous to a serving dish. If desired, top with grated Parmesan cheese before serving. Enjoy warm or at room temperature!
