2 cups cherry tomatoes, halved

1 cup fresh corn kernels (about 2 ears of corn)

1 ripe avocado, diced

1 small red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 jalapeño, seeded and finely diced (optional for heat)

Juice of 2 limes

3 tablespoons olive oil

Salt and pepper, to taste

1/2 teaspoon cumin (optional)

Instructions
 

Prepare the Corn: If using fresh corn, bring a pot of water to a boil. Add the corn and cook for about 4-5 minutes until tender. Drain and let cool, then cut the kernels off the cob. If using canned or frozen corn, simply thaw and drain if necessary.

    Chop the Veggies: In a large mixing bowl, combine the halved cherry tomatoes, diced avocado, chopped red onion, corn kernels, and diced jalapeño (if using).

      Make the Dressing: In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper until well combined. Adjust seasoning to taste.

        Combine: Pour the dressing over the salad mixture. Gently toss everything together to coat without mashing the avocado.

          Add Freshness: Fold in the chopped cilantro for a burst of freshness.
