12 oz cheese tortellini

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup bell pepper, diced (red or yellow for color)

1/2 cup black olives, sliced

1/2 cup red onion, thinly sliced

1/4 cup fresh basil, chopped

1/4 cup grated Parmesan cheese

1/3 cup olive oil

2 tbsp red wine vinegar

1 tbsp Dijon mustard

1 clove garlic, minced

Salt and pepper to taste

Cook the Tortellini: Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

    Prepare the Vegetables: In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, bell pepper, sliced olives, and red onion.
