Ingredients

1/2 cup chia seeds

2 cups coconut milk (full-fat for creaminess)

2 tablespoons honey or maple syrup (adjust for sweetness)

1 teaspoon pure vanilla extract

1/2 teaspoon salt

1 cup diced tropical fruits (mango, pineapple, kiwi, and banana)

Fresh mint leaves for garnish (optional)

Toasted coconut flakes for topping (optional)

Instructions

Prepare the Chia Base: In a large mixing bowl, combine the chia seeds with coconut milk. Stir well to avoid clumping.

Add Sweetener and Flavor: Add honey (or maple syrup), vanilla extract, and salt to the chia mixture. Whisk thoroughly until everything is well combined.

Let It Set: Cover the bowl with plastic wrap or a lid and place it in the refrigerator for at least 4 hours, or preferably overnight. This will allow the chia seeds to absorb the liquid and create a pudding-like consistency.

Prepare the Tropical Fruits: While the chia pudding is setting, dice the tropical fruits into bite-sized pieces. If using banana, slice it just before serving to prevent browning.

Assemble the Pudding: Once the chia pudding is set, give it a good stir. Spoon the pudding into serving bowls or jars, layering with the prepared tropical fruits.

Garnish: Finish with a sprinkle of toasted coconut flakes and a few fresh mint leaves for a touch of color and fresh flavor.

Serve and Enjoy: This Tropical Fruit Chia Pudding can be enjoyed immediately, or it can be stored in the refrigerator for up to 3 days.
