1 medium ripe pineapple, peeled, cored, and cut into wedges

1 cup coconut water

1/2 cup freshly squeezed lime juice (about 4 limes)

1/4 cup simple syrup (adjust to taste)

1/4 teaspoon sea salt

Fresh mint leaves, for garnish

Lime slices and pineapple wedges, for serving

Ice cubes, for serving

Prepare the Marinade: In a mixing bowl, whisk together coconut water, lime juice, simple syrup, and sea salt until well combined. This mixture will be the tropical marinade for the pineapple.

    Marinate the Pineapple: Arrange the pineapple wedges evenly on a large sheet pan. Pour the marinade over the pineapple, ensuring all the pieces are coated. Let it marinate for at least 30 minutes at room temperature to absorb the flavors.

      Roast the Pineapple: Preheat your oven to 400°F (200°C). Once marinated, place the sheet pan in the preheated oven. Roast the pineapple for about 15-20 minutes, or until golden brown and slightly caramelized. Flip halfway through cooking for even roasting.
