Ingredients

1/2 cup unsalted butter

1 cup bittersweet chocolate, chopped (preferably 60-70% cocoa)

2 large eggs

2 large egg yolks

1/3 cup granulated sugar

1 teaspoon pure vanilla extract

1/8 teaspoon salt

1/4 cup all-purpose flour

1/2 cup powdered sugar (for dusting)

Optional: Vanilla ice cream or whipped cream for serving

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Grease four ramekins with butter and lightly dust with flour, shaking off any excess.

Melt the Chocolate and Butter: In a medium microwave-safe bowl, combine the chopped bittersweet chocolate and unsalted butter. Microwave in 20-second intervals, stirring in between until the mixture is smooth and fully melted. Allow it to cool slightly.

Whisk the Eggs: In a separate bowl, whisk together the eggs, egg yolks, granulated sugar, vanilla extract, and salt until well combined.

Combine Mixtures: Gently fold the melted chocolate mixture into the egg mixture. Be careful not to deflate the eggs too much.

Add Flour: Sift the all-purpose flour over the chocolate mixture and carefully fold it in until just combined. Do not overmix.

Divide & Pour: Evenly distribute the batter among the prepared ramekins, filling each about 2/3 full.

Bake: Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes. The edges should be firm, but the center should still look soft.

Cool Slightly: Remove from oven and let the cakes cool in the ramekins for 1-2 minutes.

Serve: To serve, carefully run a knife around the edges of each ramekin and invert onto a plate. Dust with powdered sugar. Serve immediately with a scoop of vanilla ice cream or a dollop of whipped cream for the ultimate chocolate experience.
