8 ounces elbow macaroni

4 tablespoons unsalted butter

1/4 cup all-purpose flour

3 cups whole milk

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon mustard powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

2 cups sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

1 cup panko breadcrumbs

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In a large saucepan, melt the butter over medium heat. Once melted, whisk in the flour to create a roux and cook for about 2 minutes until lightly golden. Gradually whisk in the milk, ensuring there are no lumps. Continue to whisk until the mixture thickens (about 5-7 minutes).

      Flavor the Sauce: Stir in garlic powder, onion powder, mustard powder, smoked paprika, and season with salt and pepper. Reduce heat to low and mix in the cheddar and Gruyère cheeses until melted and smooth.

        Combine: Add the cooked macaroni to the cheese sauce, stirring gently until all pasta is well coated with the sauce.

          Prepare for Baking: Preheat the oven to 350°F (175°C). In a small bowl, combine panko breadcrumbs with olive oil, mixing until the breadcrumbs are well-coated.
