For the Veggie Layer:

2 tablespoons olive oil

1 medium onion, chopped

2 cloves garlic, minced

1 bell pepper (red or yellow), diced

1 medium zucchini, diced

1 medium yellow squash, diced

1 cup mushrooms, sliced

2 cups baby spinach

1 can (14 oz) diced tomatoes, drained

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

For the Ricotta Mixture:

2 cups ricotta cheese

1 egg

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

For the Assembly:

12 lasagna noodles (oven-ready or cooked according to package instructions)

4 cups marinara sauce (store-bought or homemade)

2 cups shredded mozzarella cheese

Fresh basil leaves for garnish

Instructions
 

Prepare the Veggies:

    - In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.

      - Stir in the minced garlic, diced bell pepper, zucchini, yellow squash, and mushrooms. Cook for about 5-7 minutes, until the vegetables are tender.

        - Add the spinach, drained diced tomatoes, dried oregano, and basil. Season with salt and pepper. Cook until the spinach wilts, then remove from heat and let cool slightly.

          Make the Ricotta Mixture:

            - In a bowl, combine the ricotta cheese, egg, grated Parmesan cheese, Italian seasoning, salt, and pepper. Mix well until smooth and creamy.

              Assemble the Lasagna:

                - Preheat your oven to 375°F (190°C).

                  - In a large baking dish, spread a thin layer of marinara sauce on the bottom. Place 3 lasagna noodles over the sauce.

                    - Layer half of the ricotta mixture over the noodles, followed by half of the veggie mixture. Sprinkle with a third of the mozzarella cheese.

                      - Repeat the layers: another 3 noodles, the remaining ricotta, remaining veggies, and another third of mozzarella.

                        - Top with the last 3 noodles, the remaining marinara sauce, and the final third of mozzarella cheese.

                          Bake the Lasagna:

                            - Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for another 15-20 minutes or until the cheese is bubbly and golden.

                              Serve:

                                - Let the lasagna rest for about 10-15 minutes before slicing. Garnish with fresh basil leaves and serve hot with extra marinara sauce on the side if desired.
