Ingredients

1 cup unsalted butter, softened

1/2 cup honey

1 vanilla bean, split and scraped (or 1 teaspoon pure vanilla extract)

1/4 teaspoon sea salt (adjust to taste)

1 teaspoon lemon juice (optional, for brightness)

Instructions

Prepare the Ingredients: Start by allowing your unsalted butter to come to room temperature. This will make it easier to blend with the other ingredients.

Combine Butter and Honey: In a large mixing bowl, use a hand mixer or a stand mixer to beat the softened butter until creamy and smooth. Gradually add in the honey while mixing, ensuring it’s well combined.

Add Vanilla and Salt: Carefully split the vanilla bean lengthwise and scrape out the seeds using the back of a knife. Add both the seeds and the vanilla bean pod (for infusion) to the mixture. If you’re using vanilla extract instead, add that now. Sprinkle in the sea salt and mix until evenly incorporated.

Finish with Lemon Juice: For a hint of freshness, add the lemon juice (if using) and blend it into the butter mixture until combined. This step is optional but can add a delightful brightness to the flavor.

Taste and Adjust: Give your honey butter a taste. Adjust the sweetness by adding more honey or the saltiness by adding a pinch more salt if desired.

Chill and Serve: Transfer the Vanilla Bean Honey Butter to an airtight container. If you prefer it firm, chill it in the refrigerator for about 30 minutes. Otherwise, it can be served immediately at room temperature.

Enjoy: Spread generously on warm toast, muffins, pancakes, or anything else you desire. Store any leftovers in the refrigerator for up to 2 weeks.
