Ingredients

1 cup all-purpose flour

1 ripe banana, mashed (about 1/2 cup)

1 tablespoon sugar (brown or coconut sugar works well)

1 tablespoon baking powder

1/4 teaspoon salt

1 cup almond milk (or any plant-based milk)

2 tablespoons maple syrup (plus extra for serving)

1 teaspoon vanilla extract

2 tablespoons coconut oil (melted, plus more for cooking)

Optional toppings: sliced bananas, berries, nuts, dairy-free yogurt, or nut butter

Instructions

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

Combine Wet Ingredients: In another bowl, mix the mashed banana, almond milk, maple syrup, vanilla extract, and melted coconut oil until smooth and uniform.

Combine Wet and Dry: Pour the wet ingredients into the dry ingredients and stir gently with a spatula or wooden spoon. Be careful not to overmix; it’s okay if there are a few lumps.

Preheat the Pan: Heat a non-stick skillet or griddle over medium heat. Lightly grease it with a bit of coconut oil.

Cook the Pancakes: Once the pan is hot, scoop about 1/4 cup of batter onto the skillet for each pancake. Cook for about 2-3 minutes or until bubbles form on the surface and the edges look set.

Flip and Finish: Carefully flip the pancakes and cook for another 2-3 minutes, until golden brown and cooked through.

Serve: Transfer the pancakes to a plate and keep them warm while you cook the remaining batter. Serve with maple syrup, fresh fruit, or your favorite toppings.
