1 cup all-purpose flour (or chickpea flour for gluten-free option)

1 cup unsweetened non-dairy milk (such as almond or oat)

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

1/2 tsp salt

1/4 tsp black pepper

1 cup buffalo sauce (adjust to taste)

_For the Tacos:_

8 small corn or flour tortillas

1 cup shredded purple cabbage

1 ripe avocado, sliced

1/2 cup vegan ranch dressing (store-bought or homemade)

Fresh cilantro leaves, for garnish

Lime wedges, for serving

Instructions

Preheat the Oven:

Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

      Prepare the Batter:

In a medium bowl, whisk together the flour, non-dairy milk, garlic powder, onion powder, smoked paprika, salt, and pepper until smooth.

          Coat the Cauliflower:

Dip each cauliflower floret into the batter, allowing any excess to drip off, then place them on the prepared baking sheet in a single layer.

              Bake the Cauliflower:

Bake the cauliflower for 20-25 minutes, flipping halfway through, until they’re golden and crispy.

                  Buffalo Sauce Coating:

In a large mixing bowl, toss the baked cauliflower with the buffalo sauce until evenly coated. Return to the baking sheet and bake for an additional 5-10 minutes to set the sauce.

                      Prepare the Tacos:

While the cauliflower is baking, heat the tortillas in a dry skillet or microwave until warm.

                          Assemble the Tacos:

Once the cauliflower is done, fill each tortilla with a handful of buffalo cauliflower, some shredded cabbage, and slices of avocado.

                              Drizzle and Garnish:

Top with vegan ranch dressing, sprinkle with fresh cilantro, and serve with lime wedges on the side.

                                  Enjoy:

Dig into your spicy vegan buffalo cauliflower tacos with a squeeze of fresh lime juice for an extra zing!
