1 can (15 oz) chickpeas, drained and rinsed

1/4 cup vegan mayonnaise (or avocado for a healthier twist)

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1/4 cup celery, finely chopped

1/4 cup red bell pepper, finely chopped

1/4 cup pickles, finely chopped

2 tablespoons fresh dill or parsley, chopped

4 slices whole grain or gluten-free bread

Lettuce leaves (optional)

Tomato slices (optional)

Instructions
 

Prepare the Chickpeas: In a large mixing bowl, add the drained and rinsed chickpeas. Using a fork or potato masher, gently mash the chickpeas until they are mostly mashed but still have some texture—about 3/4 of the chickpeas mashed.

    Mix the Dressing: In a small bowl, combine the vegan mayonnaise (or mashed avocado), Dijon mustard, lemon juice, garlic powder, onion powder, salt, and pepper. Stir until smooth.

      Combine Ingredients: Pour the dressing over the mashed chickpeas. Add the chopped celery, red bell pepper, pickles, and fresh herbs. Mix everything together until well combined. Taste and adjust seasoning if necessary.

        Assemble the Sandwich: Take a slice of bread and layer on some lettuce (if using), then add a generous amount of the chickpea salad mixture on top. Finish with tomato slices if desired. Top it with another slice of bread.

          Serve: Cut the sandwich in half, and serve immediately. For added crunch, you can toast the bread before assembling or serve it with fresh vegetable sticks on the side.
