6 large russet potatoes, peeled and diced

6 slices of thick-cut bacon, chopped

1 medium onion, diced

3 cloves garlic, minced

4 cups chicken broth

1 cup heavy cream

1 cup shredded sharp cheddar cheese

2 teaspoons dried thyme

Salt and pepper to taste

2 green onions, chopped (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Bacon: In a large pot over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes. Remove the bacon from the pot and place it on a plate lined with paper towels to drain excess grease, leaving about 2 tablespoons of bacon fat in the pot.

    Sauté Vegetables: Add the diced onion to the pot with the remaining bacon fat. Sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for an additional 1 minute, stirring frequently.

      Cook the Potatoes: Add the diced potatoes to the pot, then pour in the chicken broth. Stir in the dried thyme, and season with salt and pepper. Bring the soup to a boil, then reduce the heat to low and simmer for 20-25 minutes, or until the potatoes are tender.

        Blend the Soup: Using an immersion blender, blend the soup until smooth. (Alternatively, you can transfer the soup in batches to a regular blender, blending until smooth, and return to the pot.)

          Add Cream and Cheese: Once blended, stir in the heavy cream and shredded cheddar cheese. Return the crispy bacon to the pot and mix well until the cheese has melted. Adjust seasoning with additional salt and pepper if needed.

            Serve: Ladle the soup into bowls, and garnish with chopped green onions and parsley for a fresh touch. Serve warm with crusty bread or a side salad for a complete meal.
