Ingredients

4 cups of fresh watermelon, cut into 1-inch cubes

1 cup of feta cheese, diced or crumbled

1/4 cup fresh mint leaves, roughly chopped

2 tablespoons balsamic glaze

Freshly cracked black pepper, to taste

Wooden or metal skewers (6-inch)

Instructions

Prepare the Skewers: If using wooden skewers, soak them in water for 30 minutes to prevent burning. If using metal skewers, they are ready to use as is.

Assemble the Skewers: On each skewer, thread the watermelon cube followed by a piece of feta cheese and a mint leaf. Repeat this pattern until the skewer is filled, leaving a little space at the ends for handling. Typically, 2-3 sets of watermelon, feta, and mint per skewer work well.

Drizzle with Balsamic Glaze: Once the skewers are assembled, arrange them on a serving platter. Drizzle the balsamic glaze generously over the skewers to enhance flavor.

Season: Add freshly cracked black pepper to taste over the skewers for an extra burst of flavor.

Chill and Serve: For a refreshing taste, let the skewers chill in the refrigerator for about 15-20 minutes before serving. Enjoy as an appetizer or light snack!
