Ingredients

4 cups seedless watermelon, cubed

2 tablespoons honey (or agave syrup for a vegan option)

1 tablespoon fresh lime juice

A pinch of salt

Optional: Fresh mint leaves for garnish

Optional: Popsicle molds

Instructions

Prepare the Watermelon: Place the cubed watermelon in a blender or food processor. Blend until smooth. If desired, strain the mixture through a fine mesh sieve to remove pulp for a smoother texture, although this step is optional.

Mix It Up: In a mixing bowl, combine the watermelon puree with honey and lime juice. Add a pinch of salt to enhance the sweetness.

Taste Test: Before pouring into molds, taste your mixture. If you prefer it sweeter, add more honey or sweetener to your liking.

Fill the Molds: Pour the watermelon mixture into popsicle molds, leaving a little space at the top to allow for expansion as they freeze. If you’re using sticks, insert them into the molds now.

Add Freshness: If you like an extra burst of flavor, chop fresh mint leaves and add them to the molds before freezing.

Freeze: Place the filled molds in the freezer for at least 4-6 hours or until completely frozen.

Unmold and Enjoy: To remove the pops, run warm water over the outside of the molds for a few seconds. Gently pull on the popsicle sticks to release them. Serve immediately, garnished with a sprig of mint if desired.
