Zesty Baked Chicken & Rice Casserole

2 cups cooked jasmine rice

1 lb boneless, skinless chicken breasts, diced

1 can (15 oz) black beans, drained and rinsed

1 can (10 oz) diced tomatoes with green chilies

1 cup corn kernels (fresh or frozen)

1 cup cheddar cheese, shredded

1 medium onion, diced

2 cloves garlic, minced

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

½ teaspoon salt (to taste)

¼ teaspoon black pepper

½ cup chicken broth

½ cup sour cream

2 tablespoons olive oil

1 lime, juiced

Fresh cilantro, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Sauté Veggies and Chicken: In a large skillet over medium heat, add the olive oil. Once hot, add the diced onions and garlic. Sauté until the onions become translucent, about 3-4 minutes. Add the diced chicken breasts, and cook until they are browned and fully cooked, about 7-10 minutes.

      Combine Ingredients: In a large mixing bowl, combine the cooked jasmine rice, black beans, diced tomatoes with green chilies, corn, cooked chicken mixture, cumin, smoked paprika, chili powder, salt, black pepper, chicken broth, sour cream, and lime juice. Mix well until everything is evenly coated.

        Prepare the Bake Dish: Transfer the mixture into a greased 9x13-inch baking dish. Spread it out evenly.

          Add Cheese: Sprinkle the shredded cheddar cheese evenly over the top of the casserole.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and lightly golden.

              Cool and Serve: Remove the casserole from the oven and let it sit for about 5 minutes before serving. Garnish with fresh cilantro, if desired.
