Ingredients

1 lb chicken tenders

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornmeal

1/4 cup smoked paprika

1 tablespoon garlic powder

1 tablespoon onion powder

1 tablespoon cayenne pepper (adjust to taste)

1 teaspoon salt

1 teaspoon black pepper

1 cup BBQ sauce (your favorite brand)

2 tablespoons olive oil (for brushing)

Fresh parsley, chopped (for garnish)

Instructions

Marinate the Chicken:

    - In a mixing bowl, combine the chicken tenders with buttermilk. Cover and refrigerate for at least 1 hour (or overnight) to tenderize and flavor the chicken.

      Prepare the Dredging Mixture:

        - In another bowl, combine the flour, cornmeal, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix well until evenly combined.

          Preheat the Oven:

            - Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

              Coat the Chicken:

                - Remove each chicken tender from the buttermilk, allowing any excess to drip off. Dredge each tender in the flour mixture, pressing gently to ensure an even coating. Place the coated tenders on the prepared baking sheet.

                  Bake the Chicken:

                    - Lightly brush the chicken tenders with olive oil to help them crisp up. Bake in the preheated oven for 15-20 minutes, or until the tenders are golden brown and cooked through (internal temperature should reach 165°F or 75°C).

                      Glaze with BBQ Sauce:

                        - In the last 5 minutes of baking, remove the chicken tenders from the oven and generously brush them with BBQ sauce. Return them to the oven to caramelize the sauce and enhance the flavor.

                          Serve and Garnish:

                            - Once done, remove the chicken from the oven and let it rest for 5 minutes. Garnish with freshly chopped parsley and serve hot with extra BBQ sauce on the side for dipping.
