2 cups quinoa, rinsed

4 cups chicken broth (or vegetable broth for a vegetarian option)

1 lb (450g) boneless, skinless chicken breasts

2 tablespoons olive oil

2 tablespoons chipotle sauce (adjust according to spice preference)

1 tablespoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 avocado, diced

Fresh cilantro, chopped, for garnish

Lime wedges, for serving

Instructions
 

Cook the Quinoa: In a medium saucepan, bring the chicken broth to a boil. Add the rinsed quinoa, cover with a lid, and reduce the heat to low. Cook for about 15-20 minutes or until the quinoa is tender and the liquid is absorbed. Fluff with a fork and set aside.

    Prepare the Chicken: While the quinoa is cooking, heat the olive oil in a skillet over medium heat. Season the chicken breasts with smoked paprika, garlic powder, onion powder, salt, and pepper. Once the oil is hot, add the chicken breasts and cook for about 6-7 minutes on each side, or until the chicken is cooked through and no longer pink in the center.
