Ingredients

For the Marinade:

1/4 cup olive oil

Juice of 2 large lemons

4 cloves garlic, minced

2 tablespoons red wine vinegar

1 tablespoon dried oregano

1 teaspoon dried thyme

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon crushed red pepper flakes (optional)

For the Chicken:

4 boneless, skinless chicken breasts (about 1.5 pounds)

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Prepare the Marinade: In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, red wine vinegar, oregano, thyme, paprika, salt, black pepper, and crushed red pepper flakes (if using). This zesty marinade will infuse the chicken with flavor.

Marinate the Chicken: Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well-coated. Seal the bag or cover the dish, and refrigerate for at least 1 hour, or preferably overnight for maximum flavor infusion.

Preheat the Grill: About 20 minutes before you are ready to cook, preheat your grill to medium-high heat (about 375°F to 400°F). If using a charcoal grill, light the coals and let them burn until covered with white ash.

Cook the Chicken: Remove the chicken from the marinade, allowing excess marinade to drip off. Discard the leftover marinade. Place the chicken breasts on the grill. Cook for about 6-7 minutes on one side until you can see grill marks, then flip and cook for another 5-7 minutes on the other side, or until the chicken reaches an internal temperature of 165°F and is no longer pink in the middle.

Rest the Chicken: Once cooked, transfer the chicken to a plate and let it rest for about 5 minutes. This allows the juices to redistribute, ensuring the chicken is tender and juicy.

Serve: Garnish the grilled chicken with fresh parsley and serve with lemon wedges on the side. Pair with a Greek salad or your choice of side for a complete meal.
