1 lb boneless, skinless chicken breasts

1 cup uncooked white rice

4 cups chicken broth

2 cups water

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 stalks celery, diced

1 large lemon (zest and juice)

1 teaspoon dried thyme

1 teaspoon dried oregano

1 bay leaf

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Prep the Chicken: In a large pot, heat the olive oil over medium heat. Add the chicken breasts and season with salt and pepper. Sear until golden brown, about 5 minutes per side. Remove from pot and set aside to cool slightly. Once cooled, shred the chicken using two forks.

    Sauté the Vegetables: In the same pot, add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until softened. Add the minced garlic and cook for an additional minute, stirring frequently.

      Add Liquids and Seasonings: Pour in the chicken broth and water. Stir in the rice, thyme, oregano, lemon zest, and bay leaf. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 15 minutes or until the rice is tender.

        Incorporate Chicken and Lemon Juice: Add the shredded chicken back to the pot and stir in the fresh lemon juice. Simmer for an additional 5 minutes to heat through and meld the flavors. Taste and adjust seasoning with salt and pepper as desired.

          Serve: Remove the bay leaf before serving. Ladle the soup into bowls and garnish with fresh chopped parsley for a pop of color and freshness.
